Le Moulin à olives Protoulis, situé près du paisible village de Trygonas, à l'intérieur des terres, fait partie de cette tradition vivante. Les moulins à olives comme celui-ci sont au cœur de la vie agricole locale, transformant la récolte d'automne en une huile d'olive extra vierge épaisse et herbacée pour laquelle Lesbos jouit d'une réputation célébrée. Le processus — de la pression à froid à la filtration et à l'embouteillage — a été affiné au fil des générations, et une visite ici offre une occasion rare d'observer ce savoir-faire de près, loin des circuits touristiques de la côte.

Les visiteurs qui font le court trajet vers l'intérieur des terres jusqu'à Trygonas trouveront le type d'entreprise rurale authentique et en activité qui définit l'île au-delà de ses plages. Le moulin fonctionne généralement pendant la saison de la récolte des olives, environ de la fin de l'automne jusqu'à l'hiver, lorsque les oliveraies environnantes s'animent de cueilleurs et que l'air porte le parfum distinctif vert-doré de l'huile fraîchement pressée. À quoi s'attendre

Ce qui vous saisit en entrant, c'est l'odeur vive et herbacée de l'huile fraîchement pressée. Ce moulin est une exploitation agricole en pleine activité — pendant la récolte, vous pouvez observer la presse à froid transformer les olives tout juste cueillies en une huile vierge extra épaisse et poivrée, et en goûter directement à la source. Des bouteilles d'huile AOC du domaine sont disponibles à l'achat, un souvenir bien plus authentique que ceux proposés sur le front de mer.

De fin octobre à décembre, lorsque la récolte bat son plein et que le moulin tourne à plein régime.

Comment s'y rendre

Trygonas se trouve dans l'arrière-pays de l'île, à environ 30 minutes en voiture de Mytilène ; prenez la direction de l'intérieur depuis la route côtière est et suivez les panneaux vers le village.

I still think about this place every single day! We traveled from Dallas, Tx and this is this BEST olive oil I've ever tasted in my life. We don't get quality olive oil in the United States. I bought 4 bottles, and I still haven't opened the black one! My husband gives me a hard time because I use the oil so sparingly and only put drizzle it over what I'm going to eat i don't share at all!! I want to make a special trip back to Lesvos to buy more oil, olive salt, olive spread, and soap!

Really great experience! The guided tour is really nice, I learned a lot about the touching story of their family business. Everything for only 5€, good value for money. They explain exactly all types of olive oils and how to taste it like a pro. Loved it

Excellent tour and tasting. Our guide coached us in evaluating olive oil quality, including aroma (fruitiness), back of mouth taste (bitterness), and swallow taste (pungency). Pairing with a couple of foods helped show the differences in oils tasted. Very enjoyable experience. Very good prices for good quality oil. Bought their dried olive salt which was portable and delicious!

A superbly informative and enlightening tour. You can book online or call. We arrived at 10:30am for the tour and were joined by just one couple. Our tour guide was extremely knowledgeable and informative. Learned so much about the process for making olive oil and the history of the Protoulis business. As well as walking through the factory with new equipment, the original mill and presses from the old production were on display. There is opportunity for oil tasting and purchasing at the end of the tour. Highly recommend.

Highly recommend visiting this olive mill! We had a fantastic tour of the facilities, very informative and engaging. We learned a lot about how extra virgin olive oil is made, as well as tips on how to buy, taste, and store it properly. The olive oil itself is absolutely delicious, with a rich, fruity flavor. Definitely worth a visit, and don’t leave without picking up a few bottles!

We had an incredible experience at Protoulis Master Olive Oil Makers, thanks in large part to the exceptional hospitality and professionalism of Vlasios Nisiotis. I was able to book a tasting and tour for a group of 18 online, and from start to finish, Vlasios went above and beyond to make sure everything went smoothly. His email communication was clear, prompt, and thoughtful, and he followed up multiple times to ensure all of our needs and accommodations were being met. He even contacted our hotel to assist with transport options, which was a huge help since we were traveling from about an hour away. It was absolutely worth it! The tour was fascinating and eye-opening. We walked away with a much deeper appreciation for the incredible care, craftsmanship, and labor that goes into producing high quality olive oil. The facility also has a rich history, which made the visit even more meaningful. The highlight of the day was the olive oil tasting led by Vlasios himself. His knowledge and passion were inspiring, and we learned so much about how to evaluate olive oils by smell, taste, and quality. Everyone in our group ended up purchasing oil to bring home - it truly was that good! This was an unforgettable experience that combined education, tradition, and true Cretan hospitality. We highly recommend Protoulis to anyone visiting the area, and we can’t thank Vlasios Nisiotis enough for making it so special.

During the visit, we learned that the mill provides services to local farmers who can process their olives into oil there and can also resell the oil. In the shop at the mill you can taste various types of olive oil and make purchases, not only olive oil. I recommend buying olives, they are delicious (we had the opportunity to try them before buying them).

Lovely little olive oil factory and museum. Bit hard to find, but it is so very worth the effort to get here ! The people here are very friendly and take the time to show everything, answer all your questions, and even have a little tastery of all the various oils they make. And the quality really shows! It's tasty, smells delicious, and goes down smoothly. It's a bit of a drive to get there, but so very much worth the effort! 10/10
